How to remove the smell of dried fish while cooking
Dried fish has always been a special dish in the Bengali kitchen. From stew to roast, dried fish is a favorite dish of many. However, the problem is that the smell of dried fish is sometimes unbearable, especially for those who are not used to eating dried fish. However, by following some simple techniques, the smell can be reduced to a great extent, while the taste remains intact.
Soaking and washing dried beans:
Dried beans must be soaked and washed thoroughly before cooking . Soaking them in lukewarm water for 15-20 minutes reduces the smell of dried beans to a great extent . If desired, a little salt or vinegar can be added to the water while cooking .
Using lemon juice or vinegar: Before frying or roasting dried fish , sprinkling lemon juice on it reduces the smell . Vinegar can also be used in small quantities. It makes the dried fish taste more delicious .
Garlic , ginger and onion:
Using more garlic , ginger and onion in cooking reduces the smell of dried food to a great extent . Especially when garlic is fried in stews or roasts , the smell is reduced and the taste is also great .
Green chilies , dried chilies , and coriander
enhance the flavor of the dish and also mask the odor . So add the green chilies and coriander at the end of cooking .
Using sesame or mustard oil : Mustard oil or sesame oil enhances the taste of the dried beans and also reduces the smell . Adding raw mustard oil while stuffing the beans will not have the sweet smell .
Use a lid while cooking . Dry frying creates a lot of odor in the kitchen . So, keeping the lid on while frying or roasting will reduce the odor . Keeping the window open after cooking will help the odor dissipate faster .
At the end of cooking ,
sprinkling a spoonful of lemon juice on top of the dried lemon curd before serving enhances the flavor and reduces the odor .
